Tasting notes

A yellow-golden hue with green tints. Nose has opulent yellow-flesh fruits nuanced with oak. Palate is elegant and smooth with good mouthfeel with richness and complexity. Mineral notes, with a hint of mandarin and citrus zest along with subtle toasted flavours bringing a nice freshness. Well-balanced with good length.

Winemaking

The grapes are from from the oldest vines on the estate, planted over 35 years ago on pebble rich clay-limestone slopes known locally as "caillottes". The wine was fermented and aged in oak barrels (30% new oak) Fermentation lasts 2 to 7 months and the wine is aged for 20 months. Barrel ageing adds a new dimension to the wine`s structure giving vanilla flavours and good ageing potential.

Monkfish, Seafood Risotto and of course, goat's cheese.
